By Luigi DeMarco

Italian cheeses are some of the best in the world. And while we're all familiar with the top few selections, from our pizza and sandwich consumption, it may surprise you to know there are around 400 different Italian cheeses to choose from. And when it comes to quality and good tasting cheese, the Italians have a great passion for delivering on it, and they do.

From Sicily to Tuscany the Italians make some of the best parmigiano and provolone in the world. Their Mozzarella is a household name. And again, these don't even scratch the surface of the number of cheeses they actually make. They use goat's milk, sheep's milk, buffalo milk, and cow in their processes. All their cheeses have great texture and fragrance, and are good for both shredding and cooking.

The quality of their cheese is taken very seriously by the Italians. One thing to watch for when you shop for cheese, is their quality assurance stamp on the label. This is known either as the PDO - 'protected designation of origin', or the IGT - 'protected geographic indication. If you see this you know it' a product of good quality. If you shop for wine, you'll find that wines use these same designations.

When learning about tasty Italian cheeses, you're sure to come across the famous 'Bel Paese' cheese. In Italian, this means 'Beautiful Country'. This cheese has become one of the favorites of all time and one of the best known by people all around the world. It was first made near Milan in a place named 'Melzo'. But it's mostly made in Lombardy, with pasteurized cow's milk. It's meant to be used as a table cheese, but works very well in cooking.

Yes, the Italians and their passion for cheese making is known worldwide. They would hike up into the Alpine mountains, where they'd refine their cheese production methods. Then when they came down, the world welcomed them with open arms. Up there in the old days, back on the mountains, they'd use caves for keeping their cheese cool. The concept of refrigeration was still fairly new.

They use the same types of tools today as they did back then. After all, if it works, then don't fix it. They use wooden shelves, salt, oil, water, cutting boards and small hammers. The three main ingredients that anyone needs in order to make a cheese, is salt, rennet, and milk. From here you can make all kinds of cheeses, and using different kinds of milk and processes, will produce different cheeses.

Milk is the beginning of all cheese making. Simply broken down, cheese is milk coagulated. Ricotta is a cheese that's made with milk whey and cream. The Italians have four basic types of milk that they use, and they are buffalo, cow, sheep, and goat. But other cheeses may be made up of the milk of yaks, reindeer, or camels.

Italian cheeses are known worldwide, yet many Americans go about their lives enjoying the fruits of Italian labor, without ever learning about the processes or history behind them. It's a very interesting subject for study. If you'd like to learn more about it, you're only a few mouse-clicks away. The internet is loaded with information about the Italians and their wonderful cheese. - 30211

A Guide To Great Italian Cheeses

By Jack Hanley

Many cheeses are originated from Italy and they are imported all over the world. Cheese making is considered to be an art and many villagers still make this their livelihood. There are several varieties and styles of cheese and many different flavors to impress any palette. The distinct flavors of Italian cheeses make them very popular around the world.

Refrigeration was not available in the early years of cheese making. The villagers were very creative and used caves to store and age the cheese. The caves stayed at a constant temperature that was perfect for this process. Very few ingredients are needed to manufacture cheese and many villagers became cheese artisans.

Milk is a necessary ingredient in making cheese. Farmers use the milk from goats and sheep to make certain types of cheese and others used buffalo milk. Cows are very valuable because they provide the milk that is needed for many types of cheeses and their meat is also used in many Italian dishes.

The most popular cheese import from Italy is mozzarella. This type of cheese is made from cows milk and comes in two forms. True mozzarella cheese is stored in water and is shaped in a ball form. It is truly fresh and by storing it in water, it keeps its freshness. The second type is a mass produced form that is usually shredded or in blocks. Mozzarella is delicious on pizza and in many different Italian dishes.

If you enjoy a mild, smoky cheese flavor, Provolone is a great choice for you. This particular cheese is usually aged for up to a year and it is said that the more yellow its color, the more flavor it possesses. Provolone is usually used on sandwiches in slices.

Ricotta cheese is a mixture of different types of cheese whey that is recooked to form a grainy mixture. This creamy type of cheese is unique because it is used in sweet dishes, as well as bolder dishes such as Lasagna and Rigatoni. It is also an ingredient used in classic style cheesecake.

Another cheese that is made from cows milk is Asiago. It is usually aged for up to a year and can be shredded or used as a table cheese. It is also really good in Italian dishes and in risotto soups. It is best when served fresh and tastes really good when it is grated.

We are thankful to Italy for providing us with some of the best cheeses in the world. Can you imagine a pizza without mozzarella cheese? These cheeses are an important part of our diets and they also taste wonderful. Cheese is a healthy food and it also provides a distinctive flavor to our dishes - 30211

Renowned Italian Cheeses And Their Characteristics

By Chris Perry

Italian cheeses have their roots deeply embedded not only in the history of their country but of the continent of Europe as well. Therefore, in addition to representing the traditional aspect of the Italian as well as European cuisine which has been in vogue since the times of Julius Caesar and the mighty Roman armies they also reflect the culinary heritage of Italy throughout the world. Italian cheeses are used for a variety of preparations which not only glorify the tradition of Italy but also appeal to the taste of the people across the globe.

Mozzarella is one of the most popular Italian cheeses due to its incorporation in preparations of pizzas and different types of lasagna. This variety of cheese is a by-product of buffalo milk which is unique only to Italy, and its characteristics are that it is white in color and possesses a soft but chewy texture.

Among all the varieties of Italian cheeses, it is only the Gorgonzola which is blue in color along with a creamy texture. Having originated in Lombardy, it is found in two varieties namely the gorgonzola mountain, which has a sharp taste and the gorgonzola dolce, which is sweet and therefore is an ideal accompaniment of fruits and desserts. Apart from being served as an accompaniment for white Italian wines, hot stew and soups, this cheese tastes mild when it is young and becomes sharper as it matures.

Mascarpone is a rich, creamy and mild-flavored Italian cheese which is often used as a replacement for whipped cream in many dessert preparations likes cake, rolls and pastries not only in Italy but throughout the world.

Parmesan is counted among the full flavored Italian cheeses and can be consumed in form of slivers or after being grated although both forms are incomparable in taste to the fresh piece of this cheese. This variety of cheese is distinct due to the presence of a hard rind and should be subjected to maturation for a couple of years before being considered fit for consumption.

The Scamorza is distinct among all the Italian cheeses because of its shape which it acquires during its maturation. This cheese is prepared by hanging the fresh and unpasteurized cow's milk by a string and it is usually served with fruits.

Pecorino is probably an exception among the Italian cheeses because it is prepared from ewe%u2019s milk and is available in four main varieties namely Pecorino Romano, Pecorino Toscano, Pecorino Sardo and Pecorino Siciliano. This variety of Italian cheese is salty to taste and is subjected to maturation after which it is normally served as an accompaniment to desserts.

The list of Italian cheeses would be incomplete with the mention of Grana Padano which is pale yellow in color and faintly reminiscent of a pineapple with regards to taste. This is one of the traditional Italian cheeses which are prepared from unpasteurized milk and it is distinguished by its thick, hard and smooth outer covering. - 30211
